When I got home from work yesterday, I noticed our 6 bananas were really ripe and I didn’t want to waste them. So, I made a banana smoothie out of 2.  And, I made a banana cake with the other 4.

This banana cake was so good, I didn’t even use frosting.

I usually never have eggs in the house, because I don’t really like eggs.  I bake with them, but that is about it.

I substituted a couple Tablespoons of mayonnaise for the eggs.  I also threw in about 3 Tablespoons of sour cream and a bit of brown sugar along with the white sugar the recipe called for. I just decreased the white sugar a bit.

Those extra ingredients along with baking that cake at a 300 degree settting instead of the regular 350 degree setting, the cake was extra moist and oh, so good!
